Our extraordinary, fully-cooked, smoked ham is tender, juicy and full of flavor. Handcrafted from heritage breed pork, this ham is smoked over real wood and seasoned with just the right touch of maple and brown sugar.
When it comes to ham, we think the old ways are still the best ways. That’s why we use heritage pork raised from traceable breeding lines with quality traits for taste and tenderness to make our ham. The breeds are the old fashioned Berkshire, Tamworth, Duroc, Landrace and Hampshire breeds, all renowned for their great flavor.
Our cooperative of small farms follows strict protocols in raising the hogs. Each farm limits the number of animals on the farm; offers humane conditions in which pigs enjoy plenty of room to roam about; allows full access to the great outdoors and to shelter; supplements pasture foraging with grain feed and water; and allows the hogs their natural rooting and social behavior.
The strict vegetarian diet consists of corn, soybeans and rolled oats, with no hormones,* antibiotics, pesticides, animal by-products or fishmeal. Air-chilling eliminates water retention and preserves the superior quality and natural juiciness of the meat.
The hams are smoked over real Applewood chips without the use of artificial flavors or smoke. There’s no need for those with pork of this caliber! Left on the bone to cure, the heritage breed pork makes an incredible ham, and creates an impressive carving station. Save the bone and simmer in a bean stew to extract all that deep pork flavor.
To serve, simply thoroughly heat this fully-cooked ham and slice. It makes a classic and impressive addition to your next buffet, special occasion dinner or holiday meal.
