We use heritage pork raised from traceable breeding lines with quality traits for taste and tenderness for our hams. The breeds are the old fashioned Berkshire, Tamworth, Duroc, Landrace and Hampshire breeds, all renowned for their great flavor. We smoke the ham over real Applewood chips, and never use artificial flavors or smoke. There’s no need to with pork of this caliber!
Our cooperative of small farms follows strict protocols in raising the hogs. They limit the number of animals on the farm and offer humane conditions in which pigs enjoy plenty of room to roam about, full access to the great outdoors, shelter, grain feed and water, and are allowed all their natural rooting and social behavior.
The strict vegetarian diet consists of corn, soybeans and rolled oats, with no hormones,* antibiotics, pesticides, animal by-products or fishmeal. Air-chilling eliminates water retention and preserves the superior quality and natural juiciness of the meat.
