Our marinated breast comes from the Rohan™ duck, raised exclusively for D’Artagnan on a farm in New York State. The ducks live cage-free, in open barns with plenty of space and sunlight. They are humanely raised, fed a vegetarian diet of corn and soy, and are never administered antibiotics or hormones.Marinated in olive oil, balsamic vinegar, sun-dried tomatoes and herbs, all the sunny flavors of the Mediterranean can be yours with this ready-to-cook duck breast.We call this a “duck steak” because of its rosy-hued meat, satisfyingly rich flavor and its method of preparation; if you can cook a steak, you can cook a duck breast using the same techniques, either seared or grilled. All you have to do is follow the simple cooking instructions on the label, and voilà! A culinary masterpiece is yours. Just remember to keep duck on the rare side for best flavor.Try the classic accompaniment to duck breast: diced potatoes sautéed in duck fat, and dressed at the last minute with finely chopped garlic and fresh, minced parsley.
