Our Duck Mousse Basquaise is inspired by a traditional recipe from the Basque country in South West France. It combines duck fat and creamy livers with Port wine and sweet roasted red bell peppers for a silky mousse that is perfect for picnics or as part of a charcuterie plate.
D’Artagnan’s Duck Mousse Basquaise is made with the best-quality duck fat and duck livers, Port wine and sweet roasted bell peppers using a traditional Basque-country recipe. The mousse is luscious and velvety and makes an elegant addition to any charcuterie plate. It also makes an ideal pre-dinner snack spread on crackers or crusty peasant bread.
Port is a wonderful pairing with the mousse, but we also love it with full-bodied whites from Burgundy. It keeps in the refrigerator for up to a month, so it is an excellent hors d’oeuvre standby for the gourmand host.
Serve it in with a selection of our other handcrafted charcuterie—such as our Saucisson Sec, Jambon de Bayonne (French Prosciutto) or Smoked Magret Duck Breast and paired with sliced baguette, crisp-tart apples and an assortment of cheeses to round things out. Voilà—instant hors d’oeuvre!
