Our Berkshire hogs are raised on pasture, with access to shelter, grain feed and water, and are allowed all their natural rooting and social behavior. Berkshire Pork Milanese chops are perfect for quick weeknight cooking. Sear or bread and pan-fry them in olive oil until crisp and serve with a simple green salad.The Milanese cut comes from each end of the rib rack, so the chops tend to vary in size. These meaty and economical chops are a butcher’s secret to using the entire rib rack, and are just as tasty as the cuts from the middle of the rack.
