Take a walk on the wild side with our unique take on the classic dry-cured sausage. This wild boar saucisson sec offers distinctive depth of flavor and a peppery kick that’s a welcome addition to a charcuterie or cheese plate (and we like it paired with black truffle butter!).
It doesn't get more free range than this. Our wild boar are actually wild, and are humanely cage trapped in Texas then brought to USDA-inspected processing plants. The wild boar eat greens, native roots, acorns, and pretty much any agricultural crop they can access. As a result, farmers and ranchers in Texas are fully supportive of the law that encourages hunters and trappers to cut down on the population of these nuisance hogs. This works to your advantage, because even in a state as large as Texas, they can’t eat all the wild boar!
D’Artagnan works with a group of trappers to provide the best wild boar on the hoof in Texas. The free-range lifestyle of the wild boar results in a delicious, lean meat that tastes like intense pork.
A twist on classic French dry-cured sausage, our wild boar saucisson sec has wonderful depth of flavor and a unique peppery kick. It makes an excellent addition to a charcuterie board or cheese plate and adds flavor and texture to your favorite recipes. Try it in sandwiches, sliced on pizza, cubed in pasta or for a simple canapé, serve sliced with our black truffle butter on a crusty baguette.
