Roasted, stuffed or grilled, our all-natural, whole young chickens—poussins in French—are a solution for quick, weeknight cooking.
Our poussins are young chickens that are humanely raised in open barns with plenty of space, on an all-vegetarian diet without any antibiotics or hormones. They range in weight from 16-20 ounces and make the perfect portion for serving one adult. The meat is tender, mild and sweet—like chicken, only better.
Pan roast, broil or grill the bird whole, or snip out the backbone with a pair or kitchen shears and cook it flat in a sauté pan for super-crispy skin. Because a poussin is small, it will cook quickly, which means that a single poussin makes an excellent weeknight meal for one adult or two children.
