Our Moulard ducks are raised in free-range conditions on a duck farm in New York State without the use of hormones or antibiotics.
To make our distinctive bacon, the entire duck breast is smoked over real wood chips—no artificial liquid smoke or flavors are used—and then thinly sliced. Labeled “uncured” because it has no added nitrates or nitrites, our unique duck bacon has a rich, smoky flavor that you're sure to enjoy.
Duck bacon is ideal for pork-free diets and is a fun substitute even for traditional pork bacon lovers. Serve it for breakfast or use it to enhance all kinds of dishes, including salads, pizza and pasta. Or make a DBLT—duck bacon, lettuce and tomato sandwich--for a change of pace. Whether you wrap it around scallops, toss into carbonara or use to enrich a braise, you’ll find plenty of uses for this savory duck bacon.
*According to a statement by the USDAingredients: duck prepared with:water, salt, raw sugar, natural flavorings (celery powder), lactic acid starter culture (not from milk)
"What happens when you use duck bacon in this classic mid-century hors d'oeuvre? You end up with a perfect bite-sized morsels of sweet scallop and salty bacon. "
"This classic recipe has many variations, but almost always includes cheese, eggs, cured fatty pork and a lot of black pepper. We've also snuck in some duck and truffle oil."
