    All-natural Angus beef hanger steak. The cattle are pasture-raised on a 100% vegetarian diet in humane conditions, without any antibiotics or hormones.

    GENERAL DELIVERY: All orders ship via FedEx Overnight. You choose your delivery date - up to 30 days in advance. Orders placed before Noon ET, Monday-Thursday can be delivered the next business day. For Christmas delivery, orders must be placed before Noon EST, Wednesday, December 21st.

    CHRISTMAS PRE-ORDERS:: Orders containing a "pre-order" Turkey, Turkey Breast, Goose or Capon must be delivered on December 20th, 21st or 22nd.

    This cut is sometimes called “butcher’s steak” because the butcher usually brings it home, and the customers never see it.

    It is tender, flavorful and more affordable than other beef cuts. It's a winner in every respect. Popular around the world, the hanger steak is easy to cook and quite versatile; just a quick sear in a hot pan is all it needs.

    Please note: this cut demands a little attention in the way of trimming the fat. But it rewards with tender texture and intense beefy flavor. Truth be told, the hanger steak is a staff favorite for a quick lunch at the D'Artagnan office.

    Just imagine if you could raise a steer from birth on the grass in your own back yard, and then feed it locally-grown alfalfa hay, barley and corn for a few months. You could guarantee it never got any animal by-products in the feed, nor any hormones or antibiotics. Well, that’s exactly what our ranchers do –but in a 10,000-acre backyard in the Northwest.

    This group of conscientious cattle ranchers formed a cooperative to focus on humane care for the animals, and the highest quality finished product.

    Their Black Angus cattle range over pasture land for most of their lives, and are then rounded up and fed a supplement of alfalfa hay, barley and corn for a few months in a spacious, dry, low-stress feeding facility, before processing (usually at about 2 years of age). The 100% vegetarian feed is supplemented with vitamin E and A which helps strengthen natural immunities.

    To the ranchers, humane treatment is of paramount importance, so every care is taken, even in transporting the cattle short distances. They know exactly where each animal comes from, and can track them from birth to processing, all of which takes place in the great Northwest. Each animal comes with an affidavit that proves that the rancher followed the strict natural protocols of the cooperative.

    Trim the fat off, and use your favorite marinade; then sear it quickly in a hot pan until medium rare. Serve with pan juices and duck fat french fries, or cut into strips to top a salad, rice dish or fill fajitas or tacos.
