    Naturally marinated in spices of the Southwest—the American Southwest, that is—this succulent and easy-to-cook duck breast has a kick of heat from ancho and chipotle peppers.

    We did the marinating, so all you have to do is the cooking. Lucky for you, this duck breast is incredibly easy to prepare. We call it a “duck steak” because it can be cooked the same way as beef, with equally satisfying results.

    As with all our recipes, we keep it simple and natural. Our marinade contains red wine, vinegar, ancho and chipotle peppers, as well as a dose of other spices to bring the satisfying smoky flavors of the Southwest to your kitchen.

    Cook this duck breast rare to medium-rare; let it rest, and then slice it over a bed of rice and beans with a flourish of cilantro on top. A pickled salad of corn, onions, nopales and red peppers would make an interesting accent. You could even shred duck breast for tacos or burritos. You’ll forget all about beef.

    The D’Artagnan Rohan™ duck is a proprietary hybrid of several duck breeds including the Heritage Mallard and the Pekin, and is raised exclusively for us on a farm in New York State. The duck is named after a family of dukes and princes who lived in the Rouen area of Brittany, France, and made the name, and a native duck, famous.

    Like our other ducks, the Rohans are raised cage-free, and are never administered antibiotics, hormones, or steroids. Living in open barns with plenty of space and sunlight, the ducks eat a vegetarian diet of corn, soy and fresh, clean water.

    The ducks are hand-processed on the farm in a USDA-inspected plant. A superior air-chilling process means that the ducks do not retain water, which can affect texture, taste and weight.
