    While the term “prosciutto” technically refers to cured pork, we think that our duck version gives the hog a run for its money.

    We start with the meaty Moulard duck breast, known as magret, and rub it with salt and sugar—a classic combination—before hanging and dry-curing it. The result is a flavorful prosciutto that practically melts in your mouth.

    You will receive a whole piece of prosciutto, which gives you the option to cube it and add to beans, pasta and stews, or slice it thinly and wrap around juicy chunks of melon or ripe figs.

    With a balanced flavor and firm, yet silky texture, duck prosciutto is perfectly at home on a charcuterie board or cheese plate.

Using old techniques and recipes, our handmade charcuterie line represents the full range of styles and flavors, including this unique duck prosciutto.
