These delicacies from France and Italy are similar in appearance to black winter truffles, except that they are somewhat lighter in color, with a veined, coffee-colored interior. They also have a lighter, more delicate flavor that does not stand up to hot preparations and are best used fresh, grated over pasta, eggs, mashed potatoes and salads, or to finish butter sauces for meats.
